How to Make Caramel Iced Coffee?

What You’ll Need

In order to make caramel iced coffee, you’ll need:
– 1/2 cup of strong brewed coffee
– 1/2 cup of milk
– 1/4 cup of sugar
– 1/4 teaspoon of vanilla extract
– 3/4 cup of ice cubes

Making the Caramel

In a small pot over medium heat, combine the sugar, water, and corn syrup. Cook stirring frequently until the sugar has dissolved. Once the sugar has dissolved, stop stirring and allow the mixture to boil until it turns a deep amber color. Remove from heat and very carefully add in the cream (the mixture will bubble up). Stir until combined then add in the vanilla extract and salt. Pour into a glass jar and allow to cool completely

Adding the Coffee

Start by adding the coffee to a blender. Add in 1 cup (8 oz / 237 ml) of cold water for every 2 tablespoons (0.5 oz / 14 grams) of coffee you’re using. If you’re using a light roast, you’ll want to use more coffee, and if you’re using a dark roast, you’ll want to use less coffee.

Blend the coffee and water on high speed for 30 seconds. The goal is to get as much oxygen into the mixture as possible so that the coffee doesn’t become too bitter when it’s cooked.

Next, pour the coffee into a saucepan and place it over medium heat. Cook the coffee until it reaches a boil, then reduce the heat to low and simmer for 10 minutes.

Adding the Milk
